Eggplant ‘pizza’ bagels


Remember pizza ???? bagels ???? ? Well our friend @healthtrition created this amazing, NEW and improved version of pizza bagels with a touch of eggplant.


1 cup cashews (soaked in hot water for 20 minutes)
1 cup original Lavva yogurt
1 ½ tsp. sea salt
2 Tbs. Nutritional Yeast
1.5 Tbs Lemon juice
1 Tbs Apple cider vinegar
3.5 Tbs. Tapioca Starch
½ cup water or plant-based unsweetened milk

1.Add [soaked] cashews, Lavva yogurt, sea salt, ACV, nutritional yeast and lemon juice and Nutritional yeast to a highspeed blender or food processor. Blend until the texture turns creamy and pulse in between while scraping off sides.
2.Once blended, add in tapioca starch and blend again.
3.Transfer to a saucepan over low-medium heat and begin whisking. Continue whisking for 3 minutes till it begins bubbling and beginning to look thick and clumpy. Add in water or milk a little by a little to achieve the “cheesy-stringy-like texture.
4.Once texture achieved, use a wooden spoon/ladle to thicken it and form a “ball”
5.Pull apart the “ball” and mold into smaller “cheese balls”.
6.Place on bread to make a grilled cheese, top on pizza and then bake or use as raw mozzarella in something like a caprese salad.
