Squash + black bean taquitos with cilantro lime sauce

Makes 10

taquitos:⁣
– 1.5c butternut squash⁣
– 1 can black beans⁣
– 10 tortillas ⁣
– 1/2 tbsp olive oil ⁣
– 1/4 tsp chili powder/taco seasoning⁣
– dash of salt/pepper⁣
– 1 tbsp cilantro, chopped⁣

cilantro lime sauce: ⁣
– 1/4c @lovvelavva original flavor yogurt
– 1 tbsp cilantro, chopped⁣
– 1 tbsp lime juice⁣
– 1/2 a lime, zested⁣
– dash of salt⁣

Directions:

  1. Pre heat oven to 425°F.
  2. Chop squash into small cubes so it doesn’t overpower the beans when eaten. Roast in the oven for 20 minutes or until tender.
  3. Add cooked squash to a bowl, mix in the beans + 1/4 tbsp olive oil + and seasonings.
  4. Lay parchment paper on a pan, add this squash/bean mixture to each tortilla (~2tbsp per tortilla) and roll up. Brush the outside with olive oil to prevent sticking; place the tortillas close to each other to prevent them from unrolling.
  5. Bake for 25 minutes.
  6. While taquitos cook, make lime sauce by simply blending all of the ingredients listed in a blender. ⁣ Top on warm taquitos, and enjoy!
