Makes 10
taquitos:
– 1.5c butternut squash
– 1 can black beans
– 10 tortillas
– 1/2 tbsp olive oil
– 1/4 tsp chili powder/taco seasoning
– dash of salt/pepper
– 1 tbsp cilantro, chopped
cilantro lime sauce:
– 1/4c @lovvelavva original flavor yogurt
– 1 tbsp cilantro, chopped
– 1 tbsp lime juice
– 1/2 a lime, zested
– dash of salt
Directions:
- Pre heat oven to 425°F.
- Chop squash into small cubes so it doesn’t overpower the beans when eaten. Roast in the oven for 20 minutes or until tender.
- Add cooked squash to a bowl, mix in the beans + 1/4 tbsp olive oil + and seasonings.
- Lay parchment paper on a pan, add this squash/bean mixture to each tortilla (~2tbsp per tortilla) and roll up. Brush the outside with olive oil to prevent sticking; place the tortillas close to each other to prevent them from unrolling.
- Bake for 25 minutes.
- While taquitos cook, make lime sauce by simply blending all of the ingredients listed in a blender. Top on warm taquitos, and enjoy!
