Keto Recipe: Lemon Coconut Cacao Bites


Lemon-Coconut Butter Frosted Keto Cacao Bites


1⁄4 cup Original Lavva
1⁄2 cup melted coconut oil
1⁄4 cup strong brewed coffee
2 tsp vanilla extract
1 Tbsp ground flax seed
1⁄4 cup water
1⁄2 cup coconut flour
1⁄2 tsp cinnamon
1/3 cup unsweetened cacao powder
1⁄2 cup swerve (or coconut sugar, if not keto)
1⁄4 tsp baking soda
1⁄4 tsp salt


Preheat oven to 350
Combine first six ingredients in one bowl and let sit for 5 minutes to let the flax gel
Combine last six ingredients in separate bowl
Combine wet and dry mixtures
Smooth batter in a parchment lined 8X8 pan (or use mini muffin tins)
Bake for 15-18 minutes, checking frequently. Do not want to overbake – remove when still slightly underbaked to avoid drying out.
Allow to cool completely in the fridge while making the frosting


1⁄2 cup coconut milk
2 Tbsp swerve (or coconut sugar)
1⁄2 cup coconut butter
2 tsp vanilla extract
2 tsp cinnamon
2 Tbsp hazelnuts
1⁄4 cup unsweetened toasted coconut flakes
Zest of two lemons
1⁄4 cup lemon juice (or to taste)


Dissolve swerve (or coconut sugar) into coconut milk
If coconut butter is solid, heat for 15-30 seconds to loosen
Place all ingredients including coconut milk mixture in small food processor blitzing until combined (will still have some texture and crunch from the toasted coconut and hazelnuts)
Once cacao bites are cooled, remove from fridge and spread evenly with the frosting
(Optional) top with additional toasted coconut flakes, lemon zest and maldon salt
Cover and place back in fridge until frosting is firm

*Can be stored in fridge and enjoyed straight from the fridge or at room temperature
