LEMON-POPPYSEED COOKIES
WET
3 T Vanilla Lavva Yogurt
3 T Coconut Oil, melted
1⁄4 c Maple Syrup
2 T Lemon Juice + zest of two lemons
1/2 tsp Vanilla Extract
DRY
1 1/3 c Almond Flour
2T Coconut Flour
1 T Poppyseeds
1/2 tsp Baking Soda
1/4 tsp Salt
DIRECTIONS
In small bowl whisk together wet ingredients
In separate bowl whisk together dry ingredients
Combine wet into dry
Chill cookie mixture in the refrigerator for at least one hour
Preheat oven to 350 degrees
Line a cookie sheet with parchment
Remove mixture from refrigerator, scoop dough using a 1 T measure
Roll each scoop into a small round ball and place evenly spaced on prepared cookie sheet (*Note: if you find the dough sticking to your hands a little, try wetting your hands slightly before rolling)
Once all cookies are scooped, rolled and placed on the cookie sheet, gently press down each ball into a round disk about 1⁄2 an inch thick (the cookies won’t change shape much when baked)
Bake for 10 minutes or until bottoms and edges are golden brown
Set aside to cool completely
BLUEBERRY-COCONUT FROZEN YOGURT FILLING
INGREDIENTS
1 5.3 oz container of Blueberry Lavva Yogurt
1/2 c Full Fat Coconut Milk
1 c Frozen Blueberries
2 T Maple Syrup
2 T Coconut Flour
1/2 tsp Ground Cinnamon
DIRECTIONS
In small bowl whisk together all ingredients except frozen blueberries making sure that the coconut flour is well incorporated
Stir in frozen blueberries
Place yogurt mixture in freezer for about 1 hour or until firm but still easily scooped if you are filling the cookies right away, otherwise yogurt can be kept in freezer and thawed slightly when you are ready to assemble the ice cream sandwiches
ASSEMBLY
Set one cookie with the bottom facing up, spread 1 T of the semi-frozen blueberry mixture on top then place second cookie (bottom facing yogurt mixture) on top to complete the sandwich.
Place in freezer immediately to firm up the rest of the way, about another hour or so
Once sandwiches are firm they can be stored in an airtight container in the freezer or wrapped individually in plastic wrap and stored in the freezer for an easy to grab treat!
